Keylime Cake

I know what you are saying. Well it’s about time!! You are right about that. Life can throw you a bunch of curve balls sometimes which keep you away from doing the fun activities. Anyway, I have a free Sunday and would like to finally add this cake recipe to this blog.

I got this recipe from a cousin who lives in Sparta Georgia. Sparta is a very small town where time stands still. Every time my mother and I go back to visit, she would say, “This town hasn’t changed in 50 years.” She isn’t exaggerating. If you want to go to the movies or get some fast food, you would have to plan a trip out of town to Macon or drive 2 hours to Atlanta to go to a big city to enjoy some good shopping or just to go out on the town. That’s how the city slickers would view this place, but for those of you who like the small town living with one stop light, it’s paradise. There’s one good thing that I can say about Sparta, is there’s no better place to experience real southern cooking. The food my family prepares is so good, it makes you want to slap your mama. I wouldn’t advice that because mama’s slap back down there.

Ingredients
  • 1 Box of Lemon Cake Mix
  • 3 oz Lime Jello Mix
  • 5 eggs
  • 3/4 cup Orange Juice
  • 1 3/4 Cups Oil
  • 1/4 cup Lime juice
  • 6 tablespoons of Confectionery sugar
  • Cream Cheese Frosting

Directions:

Preheat the Oven at 350 degrees. Mix the cake mix, lime jello, 5 eggs, orange juice and oil in a bowl. Make sure your batter isn’t lumpy.

I like to use my stoneware bundt pan. What I like to do is brush some oil in my bundt pan so the cake won’t stick. You can use the cake pan of your choice. I just get better results using my stoneware bundt pan.

After the batter is mixed, pour the batter into your cake pan and bake at 350 degrees. My cousin didn’t give me a time limit to leave the cake in the oven, so what I would do, is let it bake for 20 minutes and use a fork or a wire cake tester, if you have one to check to see if the cake is done or make sure the fork or wire cake tester comes out clean.

When the cake is done, remove the cake from the pan onto a cake plate and let it cool for 10 minutes.

I like to use a bundt pan for baking this cake.

Make the lime juice sauce for the cake.

Mix(I like to use a wisk) the 6 tablespoons of confectionery sugar and 1/4 cup lime juice together.

Pour or spoon it evenly over the cake before frosting.

Now it’s time for frosting the cake.

You can either make your own cream cheese frosting or buy it already make from the store. This time I bought it from the store because I was in a hurry.

This cake has become one of my favorites. I couldn’t cut this one to show you the color because I was actually making it for a birthday party. You probably can get an idea from the second picture. You can see that the inside is a nice dark lime green. This cake isn’t to tart at all. The confectionery sugar adds the perfect sweetness to the lime.
